The Japanese company Kuki 九鬼 is the leader in artisanal sesame oil production in Japan. Their famous husk removal process "flection" allow them to use NO chemicals in the treatment, which takes longer but dramatically improves the taste of the oil.
As they compress the seeds, they pay close attention to the compressor power and temperature, the colour and the intensity of the fragrance are determined during the roasting process, by selecting different temperatures to obtain different results.
