Tofu or Yuba skin is a soy-based food product. During the boiling of soy milk, in a low open pan, a film, ie the "skin", forms on the surface of the liquid. The film is collected and dried into yellowish sheets known as tofu skin.

In Chinese cuisine, tofu skins are widely used in the vegan diet. It is an essential ingredient for the famous dim sum dish "beancurd prawn roll" and spring rolls. It's versatile for multiple uses, for stew dishes, as wrapping or cutting into smaller pieces for a stir-fry. You can also use it the Japanese way for an appetizer by dressing it with soy sauce, vinegar, and sesame oil.

Very good tofu skin

Did use this for making Sūgí from the recipe of the Vegan Chinese cooking, it needs a very long rehydration and cooking time, but it has a really nice texture once properly prepared
