Also known as Hua Tiao Chiew, it is a type of yellow wine made from glutinous rice, the best quality of all from Shaoxing city of China. The name Huadiao refers to the flower pattern engraved on the jars which is a local tradition when brewing this wine. In Zhejiang province, Huadiao wine is widely drunk both chilled and heated. In other parts of China, Malaysia and Singapore, it is considered more a cooking wine, commonly used in meat dishes. The flavor of Shaoxing Huadiao would remind you of the Italian Marsala or Sherry wine, but they are not the substitute because of the particular fragrance Huadiao wine provides. If you wonder why your homemade Chinese food does not taste like the authentic one, Shaoxing wine may be the missing ingredient.
