The Miao are one of the 56 official ethnic groups of China living in Southern China, they live primarily in southern China's mountains, in the provinces of Guizhou and Yunnan.  Due to their unique geographical environment, sour soup is the number one feature of their cuisine. The secret to the sourness is fermenting rice for the soup base, added by a mixture of fresh herbs, green peppers, ginger slices and garlic. Chicken, pork, shrimp, tofu etc, can be put into the sour soup, but the most typical variation is Sour Soup Rice Vermicelli.

1. Put the noodles and 800ml of cold water into a pot and bring to a boil. After boiling for 12-15 minutes, remove the noodles into a bowl

Fill 400ml of cold water to boil again, put the seasoning and cooked vermicelli into the pot together, when the vermicelli can be clipped-off with chopsticks, put the seasoning bag and the side dish bag into the pot together and stir, you can enjoy the delicious miao vermicelli, add whatever vegetables and meat you like.
