Eating bamboo shoots is a long standing tradition in Asian countries like China, Japan and Thailand. It's a root vegetable that is high in fibre and low in calories, harvested from under the ground and pre-cooked in brine water to keep its freshness and to neutralize its tartiness.
It can be braised in master stock Lo Shui with meat, stir fried in slices with hard tofu and other veggies, or diced for your easy Cantonese fry rice recipe. Bamboo shoots are often prized for the umami and being the treasure of the mountain (山珍).
You often see white powdery crystals inside the bamboo shoots, which are leftovers of a type of amino acid from the neutralizing prep-boiling process. The white substance is basically umami we taste in bamboo and there is no need to rinse it off.
