Smoked, creamy with an addictive bitter taste, Chinese Century eggs (aka Pidan 皮蛋) are duck eggs preserved in a mixture of clay, wood ash, salt, and quicklime for several months, during this process the egg white becomes jelly-like, translucent and black in colour, while the egg yolk turns kind of greenish, silky and creamy.
The century egg has at least four centuries of history, which creation method came about through the need to preserve eggs. As a side dish, they can be eaten raw in slices paired with silken tofu, dressed in soy sauce and Chinkiang vinegar.
