How to pre-cook rice vermicelli:

Bring water to boil, add a few drop of oil, cook the noodles for 30 seconds then turn off the heat immediately. Cover for 6-8 minutes (shorter time for stir-fry and longer for soup) then rinse in cold water.

Seasoning:

After pre-cooking process, you can either stir-fry or cook the noodles in soup or sauce. Whichever way you wish to season the rice noodles, bear in mind that they are easily overcooked, you should ready your sauce or soup and cook the noodles for less than 2 minutes for stir-fry and 1 minute in soup.
