Kumamoto ramen features a robust tonkotsu broth accompanied by thin straight noodles, fried separately with black sesame oil to accentuate its garlic flavor. The soup base uses no animal ingredients, like meat, fish, shellfish, or milk, and instead is comprised of soybean milk powder, powered oil, soy sauce powder, and seasoning vegetables. For the noodles, non-fried straight noodles of medium thickness typify the Kumamoto style, boasting a texture that is moderately chewy and smooth. The wheat flour used is specially-developed to enhance ramen's boil-resistance and robustness.
