Luosifen River Snail Rice Noodle, originating in Liuzhou of Guangxi province, is the absolute best-selling noodle dish throughout China. Slow-simmered broth of river snails and pork bones, pickled bamboo shoots, and chewy rice noodles form the base of this luxurious noodle dish. Also known as the "durian of noodle soups", Luosifen is known for its distinctive deep and pungent aroma. The strong and addictive smell comes from the pickled bamboo shoots. You may find it stinky at first, but as soon as you try, you may not get enough of it anymore.

Abundant toppings and sauces: fried tofu skin, sour bamboo shoots, pickled mushroom and radish, crispy peanuts...
Chilli oil and vinegar are to be added bit by bit to best suit your taste. Please don't add them all at once as they may be over-powering

1. Cook the rice noodle in boiling water for about 8 minutes, drain and set aside.
2. Bring to boil another 500ml of water, add all the sauce and toppings except the peanuts. Add chili oil and vinegar bit by bit at the end, taste the soup so it's balanced and suits your taste.
4. Add back the rice noodle in the prepared soup and boil for another 30 seconds.
5. Add peanuts and serve.
