These semi-dry fresh noodles have high water content, better taste than dried noodles, longer shelf life than fresh noodles, and can be stored for 120 days at room temperature. It can be made into soup noodles, dried noodles, hot pot noodles, and stewed noodles according to personal taste. The addition of alkali changes both the flavor and texture of the noodles and makes them feel slippery in the mouth, they also develop a yellow color and are more elastic than ordinary noodles.
