Sai Krok Isan is a fermented sausage from the Isan region of Thailand. It is made with coarsely chopped pork pancetta, combined with garlic, sticky rice, salt, and pepper. The sausage is then left near a hot oven or under the blazing hot sun to ferment for a few hours, in order to obtain its unique sourness.
Within this sausage set, you will find a mix of spices and collagen casings to make the sausages. Making sausages doesn't necessarily require a lot of work though, if you want to avoid the tedious work of stuffing the meat, you can just make meatballs, hamburgers, or meatloaves out of the same spices. You can then charcoal-grill or pan-fry them, which will make you a perfect side for beer.
